Here we are elevating the Tier 1 lemon tart (page 82), and layering it with modern French pastry flavours and textures by adding a citrus-almond cream and lemon marmalade. The difficulty lies in the decorative finish, which adds height and texture from the piping, along with pops of color from the edible flowers. You can easily scale this up and make it as one large tart.
